Traditionally, the meat includes sausage of some sort, often a smoked meat such as andouille, along with pork or chicken and seafood (less common), such as crawfish or shrimp. The vegetables are usually a sofrito-like mixture known as the “trinity” in Cajun cooking, consisting of onion, celery, and green bell pepper, though other vegetables such as okra, carrots, tomatoes, corn, chilies and garlic are also used.

Lorem Ipsum has been the industry’s standard dummy text ever since the 1500s, when an unknown printer took a galley of type and scrambled it to make a type specimen book. I have been waiting to get by here ever since they moved. As usual the best cajun inspired food north of New Orleans, and I have eaten at most of them. If you want to know what good, and I mean really good cajun food is you must eat here. George. the owner is the quintessential southern gentleman. He has always made us feel welcome and like family. My only regret is I can rate this place higher. I can honestly say the food hear is made with love, and again it’s all because of George. Can’t wait to see you again, oh to top it off, George is a veteran. Thanks for your service.
